Introduction
The international hydrocolloids conference was initiated in 1992 and has been held biennially since then. The 10th International Hydrocolloids Conference will be held on June 20-24, 2010 in Shanghai, China. The scientific program of the 10th IHC will cover current topics and recent progress in the science and technology of polysaccharides and proteins for food, pharmaceutical, cosmetics and medical applications. The theme of the 10th IHC is "Hydrocolloids Science Solutions in an Evolving World". Join us for the 10th IHC and hear the latest hydrocolloid research highlights.
